New Generation of Foodies Seek Twists on Traditional Thanksgiving Fare


As Canadian Thanksgiving approaches, foodies are looking to elevate their entrees and add a little bit of an avant-garde edge to their autumn menus. So it's little wonder that so many of them are turning their sights to the Original Turducken for the holidays.

Numerous high profile chefs are already embracing the turducken technique and integrating it into their haute cuisine menus. But the deboning and careful construction required to make a perfect multi-layered bird are not techniques easily undertaken by most chefs in their own homes. Which is why people in the food 'know' are gravitating to products like the Original Turducken, from Calgary's Echelon Foods.

The Original Turducken is a fully deboned turkey (with bone-in wings and drumsticks) stuffed with duck, chicken and a spiced sausage mix (spicy Italian or chicken apple).  New this year is a smaller and totally boneless turducken roast.  Both provide true gourmet flavour, as Mike Moser explains:
